You’ve never tried a borek recipe this easy and beginner friendly. This Turkish pleated börek is incredibly flaky with a crispy exterior made from phyllo dough and a filling of satisfying rich and salty feta cheese. Enjoy it as a snack, appetizer, or even a light meal.
Ingredients
- 1 package of phyllo dough, defrosted
- 10 oz feta, crumbled
- 3 Tbsp finely chopped parsley
- 3/4 cup milk
- 2 eggs
- 1/2 cup oil + enough to lightly oil the pan
- 200 ml seltzer (1 bottle of maden suyu or a little more than half a can of seltzer)
Directions
- Preheat the oven to 350 and lightly oil the 9×13 pan.
- Mix the crumbled feta cheese and parsley together in a medium sized bowl.
- Spread about 2 Tbsp of the feta mixture across a single sheet of phyllo dough. Like you are making a pleated fan, fold up the dough. Rips and tears in the dough don’t matter much because of the style of this borek.
- Place the pleated dough into the oiled pan with the raw edges of the dough up and the folded edges down.
- Continue with every sheet of phyllo dough in the package making sure you fill the pan.
- Prepare the sauce by whisking the eggs, milk, oil and seltzer together in a medium-sized bowl.
- Pour over the top of the pleated phyllo dough, making sure it is distributed evenly.
- Bake for approximately 20-25 minutes or until the top is golden brown.
Notes
Other than getting feta cheese on the bottom of the pan, this recipe is hard to mess up.
