This recipe made it’s debut Thanksgiving 2021 and has been a favorite ever since. It is only 4 ingredients.
Ingredients
- 3 Tbsp butter, melted
- 3 Tbsp olive oil
- 5 lbs sweet potatoes, peeled and sliced thin
- 2 shallots or 1 red onion, sliced thin
- Coarse salt and pepper
Directions
- Preheat your oven to 375.
- Heat the butter and the oil together until butter has melted. Pour 2 Tbsp in bottom of 2 quart baking dish. Sprinkle the puddle with salt and pepper.
- Arrange your potato slices vertically in the dish. Add a sliver of shallot between every few slices of potato. Brush tops of potatoes with remaining butter and oil. Season generously.
- Cover dish with foil and bake for 50 minutes.
- Increase heat to 450, remove foil and roast an additional 10-20. The top of the potatoes should be nicely browned.
Notes
You can make this ahead and reheat it before you serve. Heat with foil and then take the foil off to crisp up the top.
