Easy red lentil soup

This is a classic Turkish soup recipe that hits all the boxes. It is not only cheap and easy to make, it is kid approved. My youngest daughter will “drink” this by the gallon.

Ingredients

1.5 cups red lentils
1 Tbsp olive oil
1 medium size onion
1 sweet potato or carrot
1 Tbsp tomato paste
1 tsp salt
6 cups water or stock

Instructions

  1. Saute the onion in olive oil.
  2. Add the tomato paste.
  3. Add the rest of the soup ingredients.
  4. Simmer on medium heat until the lentils are soft and mushy – 20-25 minutes.
  5. Smoothen with a hand blender.

Suggestions and notes

  • Serve with hot paprika butter and/or a squeeze of lemon.
  • This soup is very forgiving if you make it too thick. Just add water or stock to thin. It will thicken up as it cools.
